Whole chicken in the oven, step by step photo recipe for the holiday

The days on the eve of the new year are special. It seems that the air is filled with magic and expectation of a miracle, cities are decorated with millions of blinking colored lights, and warm light is pouring from the windows of houses. The atmosphere of love, happiness and celebration is created by the caring hands of the housewives who conjure at the stove. And no winter holiday is complete without a baked bird. Whatever bird you bake whole: turkey, duck, goose or chicken, you get a delicious, satisfying, aromatic dish.

The easiest way to bake a chicken is: it is not too big, which means it will definitely be baked. This bird is affordable, not greasy, and even considered dietary.

So how do you bake a whole chicken in the oven?

Required:

  • whole chicken carcass;
  • salt pepper;
  • Italian spices;
  • parsley, thyme, rosemary;
  • a couple of small oranges or apples.

Preparation:

Line a baking sheet with foil and place just above the baking rack. Rinse the chicken with water, pat dry with a paper kitchen towel, rub generously with salt and seasoning inside and out. Start with herbs and fruits.

A little secret: so that the carcass is salty not only on top, but also inside (usually the breast is unsalted), you need to chop the breast with a salt solution. This is done with a disposable syringe.

Solution: 1/3 cup of water 2 tsp. fine salt. To salt one breast, about 5 ml of solution is enough. This method of salting gives the finished dish extra juiciness due to the water that remains inside the chicken.

Place in an oven preheated to 220 degrees. The total roasting time is approximately 1.5 hours (depending on the size of the carcass). For the first 40 minutes, you do not need to open the oven so that the temperature does not drop in it. Then you can check the carcass. If it starts to burn on top, cover it with foil.

To make the baked chicken more savory and crispy, brush it with a mixture of orange juice and honey 15 minutes before cooking.
