Stuffed eggs with tomatoes and bacon recipe photo

Stuffed eggs are so firmly included in the New Year's menu of the country that it is difficult to imagine a festive feast without them. There are a great many options for this delicious dish. We suggest trying the recipe for spicy eggs with tomatoes and bacon. They are distinguished by their rich creamy taste with the aroma of smoke and spices. The total cooking time is 25 minutes.

You will need:

  • 2 strips of bacon;
  • 6 hard-boiled eggs;
  • 3 tbsp mayonnaise or cream sauce;
  • 2 tbsp finely chopped tomato;
  • 2 tsp olive oil;
  • salt and freshly ground black pepper to taste;
  • 1 tablespoon chives, finely chopped

Preparation:

  • Fry the bacon in a skillet over medium heat for 3 minutes on each side. Place on a paper towel to remove excess grease.
  • Gently cut the eggs in half and remove the yolks from each half.
  • Place empty egg halves on a serving dish with the round side down. If the eggs are too unstable, you can carefully cut off a thin piece from the "day", but so as not to cut the hole.
  • Mash the yolks in a separate bowl with a fork and add all the buttery ingredients.
  • Cut the bacon into small pieces and add half of the bacon to the yolks. Then add 1 tablespoon of tomatoes and stir gently.
  • Now you can add salt and spices to the filling.
  • Stuff the eggs.
  • Toss the remaining bacon and tomato with the green onions. Decorate the top of the stuffed eggs with this mixture.
