Olivier salad

Olivier is the most traditional dish on New Year's Eve. There is almost never a festive table without it.

To prepare this dish you need:

  • boiled potatoes (6 pcs.), carrots (1 pc.) and eggs (3 pcs.) of medium size;
  • green peas (200 g);
  • pickled or salted cucumbers of medium size (2 pcs.);
  • boiled meat, ham or sausage (200 g);
  • onions (1/2 pc.);
  • mayonnaise (250 g).

Cut vegetables, eggs and sausage into medium-sized cubes, mix, add peas and mayonnaise, mix and salt if necessary. Form in portions using round molds and decorate with a piglet egg, ears - carrots and pea eyes.

Vegetable salads

Vinaigrette is traditionally prepared in winter from available beets, sauerkraut, potatoes, carrots, onions and pickles.

For the vinaigrette you need:

  • boiled beets and carrots - 1 pc.;
  • boiled potatoes - 5 pcs.;
  • sauerkraut - 150 g;
  • pickled cucumber without skin - 2 pcs.;
  • onions - 1/2 pc.

Everything except cabbage is cut into cubes, leaving a mug of potatoes and beets for decoration. Mix the ingredients and season with the sauce, for which you need to mix:

  • 2 tbsp. l. sunflower oil;
  • 1 tsp mustard;
  • 1 tsp vinegar 9%;
  • 1/2 tsp Sahara.

Put in a salad bowl in the form of a pig with a patch of potatoes, eyes - from black pepper and ears from triangular pieces of beet.

Herring under a Fur Coat"

To prepare a salad you need:

  • slightly salted herring fillet - 1 pc .;

For the dish you will need:

  • fresh cucumber (1 long);
  • boiled tongue (1 beef or 2 pork);
  • sweet pepper (1 pc.);
  • red onion (1 small);
  • olive oil (2 tablespoons);
  • ground black pepper (1/4 tsp);
  • soy sauce (1 tablespoon);
  • sesame seed (2 tsp);
  • parsley for decoration.

Cut the tongue, pepper, cucumber and onion into strips, mix. For dressing, combine soy sauce, black pepper, olive oil. Season and mix. Sprinkle with sesame seeds on top and garnish with sprigs of greenery.

"Christmas candle" salad

An easy-to-prepare and easy-on-stomach dish is obtained if you take:

  • large sweet and sour red apple - 1 pc .;
  • lean ham - 200 g;

  • salad onion - 1/2 pc.;
  • hard cheese - 150 g;
  • pickled mushrooms - 150 g;
  • pomegranate seeds without pits - from 1 fruit;
  • mayonnaise - 200 g;
  • salt and pepper to taste.

Combine diced chicken breast, pickled mushrooms, finely chopped onion and mayonnaise, season with salt and pepper. Lay out in the form of a boot and sprinkle with a dense layer of pomegranate seeds on top. At the top, make a white "edge" of mayonnaise.

Salads with fish and seafood

New Year's salads with shrimps are popular, and salads with red fish have already become classics of the festive table.

Shrimp, cheese and cherry salad

Shrimp with tomatoes and mozzarella - a fresh and tasty combination.

Required:

  • lettuce (200 g);
  • cherry tomatoes (250 g);
  • peeled shrimp (0.5 kg);
  • mini mozzarella cheese (250 g);
  • garlic (2 large cloves);
  • pine nuts (1 tablespoon);
  • lemon juice (1 tablespoon);
  • olive oil (2 tablespoons);
  • sugar (1 tsp);
  • ready-made mustard (1 tsp);
  • dry oregano greens (1 tsp);
  • salt to taste and herbs to decorate the salad.

In a preheated 1 tbsp. lightly fry the crushed clove of garlic with olive oil, add shrimp there, sprinkle with lemon juice, salt. Fry until the liquid evaporates and cool. For dressing, combine the remaining lemon juice, olive oil, sugar and mustard, chopped garlic and oregano.

Place the lettuce on a large platter, top with cherry tomatoes and mozzarella balls on top. Spread the shrimps on top of the cheese and pour the dressing over the salad.

Top with finely chopped dill or cilantro and sprinkle with toasted pine nuts.

Salad with smoked pink salmon and Chinese cabbage

For cooking you need to take:

  • smoked pink salmon fillet (250 g);
  • small Beijing cabbage (1/2 head of cabbage);
  • white croutons (100 g);
  • lemon juice (1 tablespoon);
  • lean mayonnaise (4-5 tablespoons);
  • greens for salad dressing;
  • salt and black pepper to taste.

Mix finely chopped cabbage, fish strips and crackers. Drizzle with lemon juice, salt and pepper, season with mayonnaise. Put in a salad bowl and garnish with herbs.

New Year's salad "Herringbone"

This dish is shaped like a Christmas tree and sprinkled with herbs on top to create "pine needles".

For a delicious salad you should take:

  • Korean carrots (200 g);
  • sweet peppers red and yellow (1/2 fruit of each color);

This dish is prepared from:

  • 4 processed cheese curds;
  • 200 g pickled mushrooms;
  • 4 eggs;
  • 200 g crab sticks;
  • 1 clove of garlic;
  • 200 g mayonnaise.

Grind the cheese, egg yolks and whites separately on a medium grater. Chop the crab sticks and mushrooms finely enough. Squeeze the garlic into mayonnaise and mix.

Spread in layers, smearing with garlic sauce:

  1. Cheeses.
  2. Crab sticks.
  3. Egg yolks.
  4. Mushrooms.

Sprinkle with egg whites on top and decorate the dish to your liking.

"New Year's wreath"

Required:

  • boiled potatoes (2 pcs.);
  • boiled eggs (2 pcs.);
  • boiled meat or chicken (150 g);
  • fresh cucumber (150 g);
  • canned corn (small can);
  • hard cheese (150 g);
  • long boiled carrots (1 pc.);
  • dill greens - 1 bunch;
  • mayonnaise sauce - 250 g;
  • salt.

Grind potatoes and cheese on a medium mesh grater.Cut the meat, cucumber and eggs into small cubes. Mix all ingredients and season with mayonnaise. Lay in a wreath on a flat dish. Decorate with dill like spruce branches and braid with carrot strips.

"New Year's ball" salad

You should take:

  • 300 g of Chinese cabbage;
  • 200 g of pickled champignons;
  • 1/2 bunch of green onions;
  • 200 g of hard cheese;
  • 200 g mayonnaise;
  • canned corn or pomegranate seeds for decoration;
  • 2 large tomatoes.

Lay the layers on a dish in the form of a ball, smearing them with mayonnaise:

  1. Chinese cabbage.
  2. Mushrooms.
  3. 3/4 finely chopped green onions.
  4. Grated cheese.
  5. Diced tomatoes.

The last layer is not greased with mayonnaise.

Decorate the "ball" with stripes or dots of corn (or pomegranate), and make a bow out of the remaining feathers of the onion.

Swiss salad

As part of the dish:

  • 100 g of carbonade, cervelat and smoked ham;
  • 150 g of fresh and pickled cucumbers;
  • 1 pear moderately sweet with firm pulp;
  • 3 handfuls of lettuce
  • 2 tbsp thick natural yogurt without additives;
  • a pinch of dry Provencal herbs.

Cut the pear, cucumbers and meat ingredients into thin strips and mix with yogurt and herbs. Salt. Put the mixture of leaves in a serving dish, and put the finished dish on them.

Vegetarian New Year's Salads

Lenten salad for the New Year will be required if there are Christian believers in the family, since the period of fasting falls on December 31 and January 1. In Orthodox families, not a single festive feast is complete without them. In this case, you can use various vegetables and fruits, and season the dish with butter or lean mayonnaise. And in families where someone adheres to a diet for weight loss, you cannot do without diet salads for the New Year.

"Rustic"

For the dish, you can mix boiled potatoes, pickled or pickled mushrooms, pickles, onions and unrefined sunflower oil. Cut the potatoes into medium-sized slices, cucumbers in circles, onions in half rings, chop or leave mushrooms, depending on the size, or leave whole. Mix all ingredients and season with sunflower oil. Salt to taste.

Required:

  • 2 large juicy oranges;
  • 300 g of white cabbage (you can take Peking cabbage);
  • some green basil leaves;
  • half a bunch of parsley;
  • 5 green onion feathers;
  • 1 tbsp. l. apple or wine vinegar;
  • 3 tbsp olive oil (or refined sunflower oil);
  • salt and pepper to taste.

Peel oranges and films, cut into small pieces. Squeeze juice from 2 slices into a separate bowl. Chop the cabbage finely. Do not finely chop the basil, green onions and parsley, leaving some for garnish.

Mix oil with herbs, orange juice, salt and pepper. Put the cabbage and oranges in a deep bowl and mix with the dressing. Season with salt and let stand for 30 minutes.

New Year's salads without mayonnaise

Ingredients:

  • canned red beans - 250 g;
  • onions - 1 pc .;
  • garlic - 3 cloves;
  • peeled walnuts - 50 g;
  • vegetable refined oil - 2 tablespoons;
  • salt, ground black pepper - to taste.

Chop the onions in half rings and fry until golden brown in oil and cool. Put the beans, ready-made onion, grated garlic, chopped nuts in a deep bowl and mix well. Season with salt and pepper. Let stand for 15 minutes.

Fruit salads

Such fruit dishes are appropriate on the New Year's table because of their ease for the stomach.

They are prepared from both fresh and canned fruits. Salad decoration for the New Year's table can be very different - mint leaves, berries, cream, chocolate, etc.

"Exotic"

To prepare it you will need:

  • banana (1 pc.);
  • strawberries (5 pcs.);
  • kiwi (1 pc.);
  • orange (1 pc.);
  • yogurt with peach or orange flavor (2 pcs.);
  • peeled walnuts - 2 tablespoons;
  • pitted candied cherries.

Cut the fruits into small slices, mix with yogurt, put in a transparent serving bowl. Sprinkle with nuts and candied fruits on top.

It is better to cook such a dish no earlier than 15 minutes before serving, so that the juice from the fruits does not drain, and the salad does not lose its attractive appearance.

"Explosion"

Quick to cook and easy to eat.

You will need:

  • 2 oranges;
  • 1/2 can of pitted olives;
  • 2 tbsp unrefined olive oil;
  • 1-2 sprigs of fresh dill;
  • 1 tbsp. l. red hot pepper.

Cut orange into slices, olives - into slices, finely dill. Mix, salt and season with olive oil with red hot pepper flakes.
